Vidalia Onion Casserole


4 C. sliced Vidalia onions
5 T. butter
2 eggs, lightly beaten
1 C. cream
1/8 tsp. salt
1/8 tsp. pepper
2/3 C. grated Parmesan cheese
Sprinkle of paprika


Saute onion in butter until onions are transparent.  Put onion mixture into 1-1/2 quart casserole.  Combine beaten eggs, cream, salt and pepper.  Pour custard over onions.  Lift onions so custard mixes well.  Sprinkle with grated cheese and sprinkle of paprika.  Bake uncovered for 30 minutes at 350° until slightly browned.
