Scallops with Browned-Butter Sauce


1-1/2 lbs. bay scallops
1/2 tsp. salt
1/4 cup fresh lemon juice
3/4 cup unsalted butter, cut into small pieces
1 garlic clove, minced
2 tbsp. fresh lemon juice
Fresh basil (optional)


1.  Coat grill rack with nonstick cooking spray.  Preheat grill to medium (300°F to 350°F/150°C to 180°C).  Season scallops with salt and drizzle with 1/4 cup lemon juice.  Grill scallops 2 minutes per side or until opaque.

2.  Place a heavy saucepan over medium heat.  Add butter to heated skillet; cook, stirring occasionally, 6 minutes or until butter begins to brown.  Add garlic and cook 1 minute more.  Stir in 2 tablespoons lemon juice.

3.  Spoon butter sauce over scallops.  Top with fresh basil, if desired.  Serve immediately.
