Minnesota State Fair Deep-Fried Cheese Curds


1 C. milk
1 egg
1 C. flour
1 tsp. baking powder
1 tsp. salt
16 oz. white cheese curds, room temperature
Peanut oil for frying


Beat together the milk, egg, flour, baking powder and salt. Let stand 30 minutes. Meanwhile, separate the cheese curds; do not cut up the large curds. Heat oil to 390°. Put curds into batter and stir to make sure curds are well coated. Drop curds, a few at a time into hot oil. Fry curds rapidly, turning once, until they are light golden brown on both sides. Do not leave in oil too long or cheese will begin to boil and shoot out through coating. Remove, drain on paper towels. Salt and serve hot.
